This is a spring-inspired recipe. It contains no added sugar, fat, or salt. All the ingredients have cleansing properties and blend well together. You can use either red, chiogga, or golden beets. Red beets will turn the whole salad red. Golden beets and chiogga beets do not bleed.
1 large apple, shredded
1 small beet, shredded
1 small bulb of fresh fennel, shredded
Juice from one fresh lemon
Put all ingredients in a bowl. Mix well. For fuller flavor allow the salad to marinate before serving. Serve cold or at room temperature. Serves 2. Enjoy!
- Apples: Because apples are high in pectin, a type of fiber that binds to cholesterol and heavy metals in the body, they help eliminate toxic build up and to cleanse the intestines.
- Beets: Beets are among the few edible plants that contain betalains, plant pigments that give some beets their deep red color and have powerful anti-inflammatory and fungicidal properties. - Fennel: Fennel is a plant rich in vitamins and anti-inflammatory chemicals. Fennel is rich in Vitamin C, which has antimicrobial and antioxidant properties. Fennel is also high in fiber but low in calories—an ideal cleanse food.
- Lemons: Excellent liver detoxifiers, lemons contain high amounts of vitamin C, a vitamin needed by the body to make an important substance called glutathione. Glutathione helps the liver detoxify harmful chemicals. Add a squeeze of fresh lemon juice (not the bottled variety) to pure water to support your cleansing efforts on a daily basis.
