Autumn Slaw (Cabbage Apple Citrus Salad with Walnuts & Raisins)

This is a variation of my Autumn Slaw recipe. In this dish, as well as in the original, there is no added sugar, salt or oil. Instead of fresh orange juice, I use one of the new vinegars we now carry at Mother Earth’s  Storehouse, tangerine balsamic. It blends quite well with the fresh lemon flavor. Our customers really enjoyed it.


1 cup shredded green or red cabbage
1 cup shredded carrots
1 cup shredded apples
4 tablespoons dried unsweetened shredded coconut (optional)
4 tablespoons chopped walnuts
4 tablespoons raisins
3 tablespoons tangerine balsamic vinegar* (one of ME’s bulk vinegars)
3–4 tablespoons fresh lemon juice
⅛  teaspoon cinnamon

* If unavailable you an use a combination of white balsamic and fresh tangerine or orange juice.

Combine all ingredients in a medium-size bowl. Mix well.  The longer the salad marinates, the more flavorful it will become.  Serve cold or at room temperature. Serves 4–6. Enjoy!

    The high potassium content helps by opening up blood vessels, easing the flow of blood.
  • Cabbage for headaches
    A warm compress made with cabbage leaves can help relieve the pain of a headache. Crush cabbage leaves, place in a cloth, and apply on the forehead. Also, drink raw cabbage juice 1-2 oz. (25-50ml) daily for chronic headaches.

  • Anti-inflammatory and Blood Sugar Regulator.
    The natural red pigments of red cabbage (betalains) is said to lower blood sugar levels and boost insulin production. Of course it has no white sugars and very few simple sugars. Betalains have powerful anti-inflammatory properties just like beets.
