Creamy chowders are all all-time favorite! This recipe is a lighter, healthier chowder, yet it is still quite tasty. Now that the cooler weather is upon us, I’m breaking out my favorite soup recipes. This one got great reviews. Comfort food without the guilt.
2 tablespoons extra-virgin olive oil (or your favorite cooking oil)
1 cup finely chopped onions (1 medium onion)
2 teaspoons minced garlic
1 stalk celery, diced
3–4 medium potatoes, cut into cubes
1½ cups fresh or frozen corn
1 teaspoon salt
¼ teaspoon black pepper
¼ teaspoon dried thyme
4 cups water
2 vegetable bouillon cubes (or to taste)
6–7 ounces coconut milk (half of a 13–14-ounce can)
1 teaspoon nutritional yeast
Heat oil in a medium-size pot over medium heat. Add onions and garlic. Sauté for a few minutes until onions turn translucent. Add celery, potatoes, corn, salt, pepper and thyme. Sauté for a few minutes, then add water, bouillon, coconut milk and nutritional yeast. Cook on high heat for about 20 minutes until potatoes are completely cooked and tender. Put 2½ cups of the soup mixture into a blender (some of the soup will remain chunky). Make sure to leave the lid partially open to release the heat of the soup while blending. Begin to blend on low speed, gradually increasing until soup is thoroughly blended and smooth. Transfer back into pot. Cook for another 5–10 minutes. Serve warm or hot. Serves 4–6.

Protecting Your Heart: According to researchers, corn oil has been shown to have an anti-atherogenic effect on cholesterol levels, thus reducing the risk of various cardiovascular diseases. Corn oil, particularly, is the best way to increase heart health, and this is derived from the fact that corn is close to an optimal fatty acid combination. This allows omega-3 fatty acids to strip away the damaging “bad” cholesterol and replace them at the binding sites. Prevents Anemia: The vitamin B12 and folic acid present in corn prevent anemia caused by a deficiency of these vitamins.
